Hydro Honey processing gives Luis Marcelino a lot to work with, and the Aji varietal responds well to it.
Passion fruit leads with lively tropical acidity. Strawberry sits behind it, soft and ripe. Underneath, a herbal character holds the structure together and keeps the cup from tipping too sweet. Bright, fruit-forward, and balanced.
As it cools, the fruit becomes more expressive and the sweetness stays with you.
Luis Marcelino has spent the last few years building relationships with Colombian farmers who are producing exceptional cherries but don't have access to advanced processing facilities.
Working from Pitalito, Huila, Aroma Nativo keeps lots separated by farm and harvest time and develops a processing protocol around each one. The goal is always to highlight what the coffee already has rather than push it somewhere else. Full traceability throughout.
Colombian coffee has been moving this way for a while. Luis is one of the people doing it well.



Only the ripest Aji cherries were selected.
A controlled fermentation came first, before pulping. Drying was managed closely for moisture and stability so the varietal's fruit character could develop without losing definition in the cup. The result is the tropical sweetness, strawberry, and herbal complexity that make this lot distinctive.
