This Pink Bourbon is a vivid expression of the Huila terroir, where careful fermentation enhances the naturally elegant character of the varietal.
The cup opens with bright pineapple sweetness before developing into rich strawberry jam and ripe cherry. Delicate floral notes bring freshness and complexity, while a lingering finish of dark chocolate adds depth and balance. Gentle wine-like acidity carries the fruit without overwhelming it, resulting in a refined and expressive specialty coffee. Every sip feels layered and vibrant, showcasing how thoughtful processing can elevate the distinctive qualities of Pink Bourbon.
Alexander Vargas has dedicated his life to coffee, building on the knowledge gained while growing up on the family farm. In 2009, he and his wife Lidia purchased the land that became La Piragua, recognising the exceptional potential of its microclimate despite starting with only a handful of coffee trees.
Today, alongside Red Bourbon, they cultivate Pink Bourbon, Gesha, Java and Caturra, continually refining their farming practices through careful observation and analysis. Beyond producing outstanding coffee from Colombia, Alexander and Lidia are deeply committed to their local community, helping establish a small school while investing in the long-term future of both their farm and the region.


Following Brix measurement to evaluate sugar content in the fruit, the coffee is harvested by hand then double fermented. First, the whole cherries coffee undergo oxidation for 72 hours, followed by a second anaerobic fermentation in tanks with degassing valves for 98 hours. The coffee is then transferred to a covered drying shed for 20 days

I expected a bit more from this one. It tastes ok, but not intense at all.
