Located at an elevation of 1950 metres, Los Lajones benefits from cooler temperatures that allow for slower, more controlled drying.

After being carefully harvested by hand, the coffee cherries are left intact and dried naturally on raised African beds, without removing the skin or fruit. This traditional natural process allows the coffee to develop its characteristic sweetness and fruity complexity. Careful drying and good airflow help preserve the quality of the cherries throughout the process.
