Grown on the volcanic slopes of Antigua, Santa Clara is a beautifully balanced specialty coffee with notes of maple syrup, malt, and soft yellow fruit. The high elevation encourages sweetness and clarity, while the washed process delivers a clean finish and delicate citric acidity. Its smooth, rounded body makes it equally enjoyable as a filter coffee or a rich espresso, with enough sweetness to pair beautifully with milk.
Finca Santa Clara has been producing exceptional coffee in the Antigua Valley of Guatemala since 1930. Managed by fourth-generation producer Ricardo Zelaya, the farm reflects a long-standing commitment to quality, earning the prestigious Cup of Excellence award in 2001.
Coffee is cultivated between 1,650 and 1,700 metres on the slopes of Volcán de Agua, where rich volcanic soils and a cool mountain climate provide ideal growing conditions. Around a quarter of the estate is preserved as native forest, supporting biodiversity and helping to maintain a healthy environment for growing high-quality Arabica coffee.


This lot is produced using a traditional washed process, chosen to highlight natural sweetness and balance. After harvest, the cherries are pulped before undergoing fermentation to remove the remaining fruit. The beans are then thoroughly washed and transferred to African drying beds inside a specially designed greenhouse. Drying takes approximately 21 days, allowing moisture to reduce gradually and evenly. This careful approach helps preserve clarity, enhance sweetness, and create the smooth, well-balanced profile that defines this washed coffee.

Sweet and sirupy on the nose. Well rounded acidity and juicy. Definitely reminds of
Mirabell plums. A well balanced fruity coffee.
Brewed on V60, around 17,2:1 ratio (29,7g for 510 ml) and 93 degrees Celsius. Blooming 40s ~95ml, rest on continuous slow pouring up to ~2:30. Grind size 23 clicks on Comandante.
Ein eigentlich perfekter Filterkaffee, aber leider war das Röstdatum bei meiner aktuellsten Lieferung schon 3 Wochen her. Mir ist bewusst, dass Kaffee nun nicht nicht gleich nach 3 Wochen schlecht wird und das man bei frisch geröstetem Kaffee ruhig ein paar Wochen das CO₂ ausgasen lassen sollte, aber mir geht's einfach um's Prinzip, dass ich frisch gerösteten Kaffee haben möchte und dafür auch (etwas mehr Geld) bezahle, genau deshalb kaufe ich Kaffee eben nicht im Supermarkt, sondern bei einer Rösterei. Das sollte der Röster einfach berücksichtigen, besonders dann, wenn mir ein paar Wochen vorher in einer Mail von einem Mitarbeiter von "the barn" auch nochmal bestätigt wurde, dass jeder Kaffee bei jeder Bestellung extra frisch geröstet wird. Dem scheint ja dann leider offensichtlich nicht so zu sein. Bei anderen Röstern ist das Röstdatum meines Kaffees höchstens 1 Woche alt. Also insgesamt etwas schade.......
