This naturally processed lot offers creamy notes of malt and
almond butter. Low acidity and full texture are pure Brazil, but the sweetness of orange marmalade and lemon zest as it cools offer delicious complexity.
For the first time, we are offering a microlot from Paulo Izidro, brought to us by our partners FAF - Fazenda Ambiental Fortalezza. Paulo has a small estate in São Paulo, producing coffees full of character. Following the FAF principles of quality and sustainability, Paulo explores distinct variations of terror, varietal, and process.
The Paraiso varietal was developed in 2012, a hybrid of Yellow Catuai and Timor which yields superb flavour and good resistance to disease.
In contrast to normal commodity grade Brazilian coffee, FAF has embraced meticulous hand harvesting. Ripe cherries are picked, sorted, and for our naturally processed lot, slowly dried on raised African style drying beds. With the outside fruit of the cherry left intact, this gentle process ensures the development of sweet, aromatic flavour.
